I thought the same thing (about the Wisconsin remark). My version of potato soup is less fancy. Fewer ingredients but way more dairy

I have made, and it was good.

I would change it a bit, probably to reflect my Wisconsin upbringing, but both Kelli and I really, really liked it.

Specifically, I would just do away with the bacon, and instead of the trinity do the fourwhateverthenameisarchy in olive oil, and add diced ham into the mix when the potatoes go in.

But……..it was absolutley wonderful as it is.
