Phew. Even though I’m not currently cooking all of the recipes that have gone up for our Thanksgiving coverage it is still a tiring process getting all of that info out to you. What that means is the easiest dinner possible. Matt, one of the managers at the restaurant, has been asking me to do more salad recipes. I’m of a similar mind to Tom Colicchio in that I don’t necessarily consider making a salad actual cooking. What I do think a salad can be is an easy way to cobble together dinner with nary a thought.
Of course Matt would also be interested in raspberry vinaigrette, which was featured in the last salad I made for Dinner Tonight. I found a new recipe featuring fresh raspberries and I have to say it is vastly superior. I’ve replaced my old vinaigrette with this one and will continue to have it on hand whenever I need a quick salad. So yes I’m already posting up a different version of a previous recipe, but it’s so superior I believe it’s worth making the switch for.
There isn’t much else to say, this is a simple salad that took a few minutes to throw together. If you’re in a hurry never forget that there are leafy greens waiting to be married with various accoutrements any time you need something immediately.
