As you’ve likely figured out there is no new original recipe this week. This past weekend was spent down on Long Island at parties and brunch. Not to mention the five hours of driving that occurred. But all is not lost. My brother and sister-in-law also had their own adventure, and in honor of that I’ll be sharing a recipe that has a bit of Disney magic. Or just tasty ingredients that are served at a restaurant in Disney World.
Today I received a few treats from Disney. The Swedish Chef, the greatest Rice Krispies treat in the world, and an idea for a recipe to share. Annie and Jay took their first trip to Disney and did so with a distinct focus on the food. Personally I find Disney World to be the second best location for dining in the country. For the past few months Annie has scoured message boards, talked with me about my own experiences eating at California Grill and pretty much came up with a surefire schedule to enjoy both the dining and Food and Wine Festival.
I know that there are people who don’t realize that a trip to Disney World can be focused on food. They spend most of the time trying to stay out of the counter service restaurants like Pecos Bill’s that they don’t realize there’s a Narcoosse’s right there. The best bowl of French onion soup in North America resides at Chef’s de France. And don’t even get me started on the Cheddar Soup from Le Cellier. You see, Disney takes great pride in serving a wide variety of food. Not all of which is high school cafeteria quality excuses for a pulled pork sandwich.
My own personal Swedish Chef suggested that I take out my Delicious Disney and share one of my favorite foods from the happiest place on earth.
Guinness Stew, as served at the Rose & Crown Pub in Epcot
Ingredients:
2 lbs sirloin steak, cut into 1-inch cubes
½ cup flour
2 Tbsp olive oil
2 Bay leaves
1 large garlic clove, chopped
1 cup diced yellow onion
½ cup diced carrots
1 Tbsp chopped fresh thyme
1 Tbsp chopped fresh rosemary
¼ tsp red chili flakes
1 cup Guinness Stout
Salt and pepper to taste
1 quart beef broth
Serves 6 to 8
1. Place steak and flour in a plastic bag; seal bag and shake to coat.
2. Heat oil in a large, heavy-bottomed stockpot: add steak and cook over medium-high heat until browned, stirring occasionally. Reserve remaining flour in bag.
3. Add bay leaves, garlic, onions, and carrots, and cook about 5 minutes, until tender. Sprinkle in remaining flour; cook 1 minute, stirring constantly. Add thyme, rosemary, and chili flakes.
4. Slowly stir in Guinness Stout while scraping the bottom of the pan to loosen any tasty bits. Stir until smooth, thickened, and bubbly. Season with salt and pepper. Simmer 10 minutes.
5. Slowly stir in beef broth and bring to a boil. Cover, reduce heat, and simmer 1 hour. Stew will thicken and reduce by at least 1/3. Discard bay leaves before serving.
