Pasta isn’t as revered in America as it should be. Consider how much pasta we actually eat, and then think about how we mistreat this most basic of dishes. We smother it in sauce, over cook it to the point of mush, and generally have no clue what to do with it. I’m here to tell you it’s a simple matter of taking back pasta. Make pasta that is heartbreakingly delicious, and do it all with the easiest recipe you’ve ever tried.
I came home tonight lugging along dinner to find my wife cooking up some pasta in this fashion. Nowadays she cooks almost nothing, although I did get her to attempt a roasted Chilean sea bass last Friday that she enjoyed quite a bit. If my wife has the chutzpah to attempt her own pasta creation, then the least you can do is the same.
This recipe is designed to be a replacement for microwave meals, or the horrific Velveeta shells and cheese abomination people seem to love. Not only does it taste better, but it’s easier to make. Just bowl some water and heat up a pan, toss some things you like together and you’re done.
My preference is for pecorino romano, as the recipe indicates, but that means nothing. You want to go with asiago? Go for it. Parmesan cheese gets you excited? Then that’s the way to go. I promise you that a simply dressed pasta dish may be one of the best home dining experiences of your life.
