6 medium potatoes (3 each Yukon Gold and Red)
¼ cup chipotle in adobo, chopped fine
¾ cup heavy cream
4 Tbsp unsalted butter
Salt and pepper to taste
Wash, peel, and dice potatoes. Place in a large pot and cover with salted water. Bring water to boil and cook for 15 minutes, or until a fork slides easily into the potatoes. Strain potatoes in a colander.
Toss cooked potatoes into the bowl of a stand mixture. Add the rest of the ingredients and mix until well combined. For chunkier potatoes add cooked potato back into cooking pot and incorporate ingredients using a handheld potato masher.
