1 large butternut squash
2 Tbsp butter
1 ½ tsp maple syrup
1 tsp finely grated fresh ginger
Preheat oven to 400 degrees
Cut squash in half and remove the seeds. Place cut side up on a shallow baking pan and bake for 40-50 minutes.
Remove from oven and let cool for 10 minutes. Scoop roasted flesh into the bowl of a stand mixer. Add butter, maple syrup and ginger. Mix on low speed until just combined.
Serve warm
