ribeye1 300x200 Recipe: Ribeye With Warm Mango SalsaIngredients:

Steak

2 ¾ lb ribeye steaks
Salt
Pepper
1 Tbsp butter

Warm Mango Salsa

1 ripe mango, diced
1 medium red onion, diced
1 habanero, or jalapeno, diced
1 roasted red pepper, diced
3 Tbsp finely chopped cilantro
Juice of 1 lime

Make the Salsa

In a medium saucepan over medium heat add mango and onion. Season with salt and pepper, cooking 5-6 minutes, or until onion begins to soften. Turn off heat and add remaining ingredients. Season to taste with salt and pepper.

Cook the steak

Season both sides of ribeye liberally with salt and pepper. In sauté pan over medium-high heat add the butter and ribeye. Cook until desired doneness. For a 1-in thick ribeye about 3 minutes each side for medium rare.

Top ribeye with Warm Mango Salsa. Extra salsa can be kept, covered and refrigerated, for 2 days.
