2 packages ramen noodles, with beef flavor packets
10 oz sirloin
1 tsp salt
1 tsp pepper
½ tsp chipotle chili powder
½ tsp toasted ground cumin
1 cup diced onions
½ cup diced celery
½ cup diced carrot
2 large garlic cloves, minced
¼ cup red wine
4 cups water
2 Tbsp heavy cream
Season sirloin with salt, pepper, chili powder, and cumin. Cook in a sauté pan over medium high heat for 2-3 minutes per side for medium rare. Set aside to rest.
Add onion to sauté pan and cook until just starting to become translucent. Add carrot and cook 1-2 minutes, then add celery and garlic. Cook for 3-5 minutes. Deglaze pan with wine and cook until a sec (nearly dry). Mix the flavor packets with the water and add to pan, whisk in the heavy cream. Reduce by 1/4.
Meanwhile bring a pot of water to a boil and cook ramen noodles until just done, about 3-5 minutes.
Pile noodles in a bowl, ladle liquid over top. Slice sirloin into ¼ in thick slices and lay on top.
