Looking around it’s come to my attention that the whole eat local, eat fresh mantra of the foodie is a fad. Grass fed beef from a local farm is a quaint idea in today’s world, and an expensive one. I’ve discovered first hand the difficulty of trying to make such a change work. And it often reminds me of the times in the past when I vowed to exercise more, or just generally eat healthy. Michael Ruhlman broke a pig down this weekend. So uh, what did you do? Ruhlman, who is a fantastic food author, took the time to get down and dirty with a Berkshire pig he found raised and slaughtered humanely. You can read the sordid tale of woe that is breaking down such a large animal over at his blog.
