Phew. Even though I’m not currently cooking all of the recipes that have gone up for our Thanksgiving coverage it is still a tiring process getting all of that info out to you. What that means is the easiest dinner possible. Matt, one of the managers at the restaurant, has been asking me to do more salad recipes. I’m of a similar mind to Tom Colicchio in that I don’t necessarily consider making a salad actual cooking. Raspberry vinaigrette
1 cup fresh raspberries
½ cup olive oil
3 tablespoons raspberry vinegar
1 shallot, minced

1 large fennel bulb with fronds
4 cups Arugula
3 Tbsp fresh lemon juice
1 shallot, minced
¾ tsp sugar

There are two very important things I just have to mention about tonight’s dinner: I love the fall, and I’ve had better ribeye. This is the prime time for food in my eyes. The meat is meatier and all of those fall fruits and veggies are my favorites. Sure I snack on bananas year round, and who doesn’t love a succulent orange now and then? 1 small zucchini

9 oz sirloin
½ head romain lettuce, cut into bite size pieces
2 cups arugula
2 oz gorgonzola cheese, coarsely crumbled
6 vine ripened baby roma tomatoes
¼ cup candied pecans (recipe follows)
1 poached Bartlett pear (recipe follows)

After Dinner Thoughts:
Lately I’ve been working in the restaurant for 50-60 hours a week, and therefore haven’t had much time to cook delicious meals at home. Most often I’ve been throwing together something quick at work like a sirloin with balsamic glaze or flounder with wilted spinach and tomato garlic lemon sauce. Tonight I just couldn’t resist doing another of my fresh salads. more…
